My Earl Grey is a luxurious mixture of smooth Ceylon and Assam leaf teas, a pinch of Australian lemon myrtle from Northern NSW, and a sprinkling of lavender flowers that will delight the senses. My favourite Ceylon teas, personally selected based on the favourite seasonal flavours from the high-grown mountains and the lower grown estates give a malty body. A pinch of bergamot and Australian Lemon Myrtle add citrus tones and a sprinkling of lavender gives it something extra special. I first discovered Australian lemon myrtle after joining the Prom Country Bush Foods Association, a group of passionate part-time growers, talking about how to bring native flavours to the wider Australian community, who knew little of them. It was here that I was introduced to the wonderful, emerging world of native Australian flavours including sweet and zesty mountain pepper, exotic and rich quandong, fresh and fragrant round-leaf mint, and my favourite, refreshing and aromatic lemon myrtle.
