Wherever I went in the world, Earl Grey remained my most favourite tea. It was comforting and familiar in the midst of bustling unknown streets along my extensive travels. My Earl Grey is a luxurious mixture of smooth Ceylon and Assam leaf teas, a pinch of Australian lemon myrtle from Northern NSW, and a sprinkling of lavender flowers that will delight the senses. Delicate and perfumed, this pretty blend tastes of gentle times spent with dear friends.

My favourite Ceylon teas, personally selected based on the favourite seasonal flavours from the high-grown mountains and the lower grown estates give a malty body. A pinch of bergamot and Australian Lemon Myrtle add citrus tones and a sprinkling of lavender gives it something extra special. I first discovered Australian lemon myrtle after joining the Prom Country Bush Foods Association, a group of passionate part-time growers, talking about how to bring native flavours to the wider Australian community, who knew little of them. It was here that I was introduced to the wonderful, emerging world of native Australian flavours including sweet and zesty mountain pepper, exotic and rich quandong, fresh and fragrant round-leaf mint, and my favourite, refreshing and aromatic lemon myrtle.

Let me share my secrets to the perfect cup of tea… Add 1 teaspoon of tea leaf per 200ml of boiling water into the filter of your favourite teapot. Add the boiling water. Allow to Infuse for 2 minutes if you take your tea on the lighter side, 3 minutes if you prefer it stronger. Inhale the aromas as you slow down and anticipate that first satisfying sip.

• Store your scarf flat and untied
• Hand wash in cold water with mild silk-friendly detergent.
• Lay flat to dry.
• Steam if needed.
• Can be dry cleaned. Do not bleach.
